Driving motorcycle or moto in Sicily can be awesome, but if you don't find the right roads and routes it can be really bad experience and dangerous. So if riding a motorcycle is your thing, go on reading...
The first thing is traffic: it's crazy, one word is enough to describe it. Don't expect cars to stop on stop signals, don't expect them to use turning signals. So stay away from popular places. Driving along the seaside is nice, but usually most of the roads near the sea are in bad shape and full of people, cars, scooters etc... though it's nice to stop near the sea and have granita or Italian ice cream (gelato), but that's another thing.
If you want to drive curvy, good surfaced roads, get away from the sea. Also the roads in good shape are nearly always away from population. OK, the warnings have been given and the FUN can start 3.....2.......1 GO!!
